Spiesjes van tongfilets, Ganda Ham en citroenmelisse met Duvel-mousseline en groentenspie

Skewers with fillet of sole, Ganda Ham and lemonbalm with a Duvel-mousseline and vegetebable skewers



Slice the Ganda Ham in 3 equal slices. Cover the fillets with ham and lemonbalm. Roll and pierce it with a skewer. Coat with fish-marinade and seasoning. Put the vegetables on skewers. Coat them with olive oil and sprinkle mediterranian herbs on top. Grill the skewers. 

In the meantime beat a mousseline sauwe with 4 egg yolks, 1dl Duvel and 250gr molten butter. Season with cayenne pepper and salt.


Ingeredients for the vegetable skewers:

  • 1 Aubergine
  • 1 Courgette
  • 1 red pepper
  • 4 blanched cauliflower florets
  • 1 precooked cob of corn
  • 4 small tomatoes
  • Olive oil and mideterranian herbs


  • 12 fillets of sole
  • 4 slices Ganda Ham
  • Lemonbalm
  • Fish marinade
  • 4 egg yolks
  • 1 dl Duvel
  • 250gr molten butter
  • Cayenne pepper and salt
